Vegan Protein Pancakes 🥞

I don't know about you but there is one thing my body always craves after a workout: CARBS.

I'm always looking for healthy ways to incorporate carbs into my diet because let's be real, we love them. AND we need them!

I came up with these high carb high protein (all natural) vegan pancakes and it was love at first bite.



Ingredients:

1 tbsp cinnamon (for cinnamon flavored)

or 1 tbsp cacao powder (for chocolate flavored)

1/4 cup oat flour (or just grounded oats)

1/4 cup chickpea flour

1/2 tsp baking soda


1 banana

1/2 cup almond milk

1 tbsp peanut butter

1/2 tbsp coconut oil

1/2 tbsp ground flaxseed


1. Mix all the dry ingredients (cinnamon/cacao, baking soda, oat and chickpea flour) in a bowl .


2. Blend the banana, almond milk, peanut butter, coconut oil and flaxseed together.


3. Pour the banana mix over the dry ingredients.


4. Pour the batter over a nonstick pan on medium heat (approximately a 1/4 cup per pancake) and brown both sides.


Serve with fresh fruit, peanut butter or honey!
